Bringing colour to winter



January can be pretty dreary and grey up here in the Pacific Northwest, and I like to brighten up my days with colourful foods using seasonal vegetables if possible, here is a tri-colour vegetable terrine (Carrots, Root celery or Celeriac and Broccoli) with a red pepper coulis.
